Carotenoids are a class of yellow, orange and red organic pigments produced by plant, algae, bacteria, and certain fungi. Carotenoids help plants absorb light energy for photosynthesis as well as providing photoprotection. In human studies, the compounds have been found with reduction of head and neck cancers, as well as prostate cancer. They have also been monitored for the concentration in the brains of Alzheimer’s patients, and their neuroprotective properties.
