Allicin – CAS 539-86-6

Abstract

Allicin (CAS 539-86-6) is an organosulfur defense molecule isolated from garlic (Allium sativum). The compound is produced in garlic which has been crushed or chopped, resulting in an enzymatic reaction with alliinase. Alliinase converts alliin into allicin.

This compound has been studied for its potential to treat multiple drug resistant bacterial infections, including antibiotic-resistant strains like MRSA. Clinical trials observed that a quantity of allicin is effective in preventing the common cold. Furthermore, it also possesses health-promoting properties, including cholesterol- and blood pressure-lowering effects.

This molecule is unstable and rapidly undergoes changes. Proper care can be taken to stabilize the product, including minimizing exposure to oxygen and treatment with a stabilizing agent.
