Alliin – CAS 556-27-4

Abstract

Alliin (CAS 556-27-4) is an L-alanine derivative in which one of the methyl hydrogens of L-alanine has been replaced by an (S)-allylsulfinyl group. It has a role as a plant metabolite, an antioxidant, a cardioprotective agent, a neuroprotective agent and an antimicrobial agent.

AThe compound is naturally occurring in garlic (Allium sativum). During chopping or crushing, alliinase converts alliin into allicin.

This compound has been studied for its potential to treat multiple drug resistant bacterial infections, including antibiotic-resistant strains like MRSA. Clinical trials observed that a quantity of allicin is effective in preventing the common cold. Furthermore, it also possesses health-promoting properties, including cholesterol- and blood pressure-lowering effects.
