8-Gingerol

Abstract

8-Gingerol (CAS 23513-08-8) is a phenolic phytochemical that is naturally occurring in fresh ginger root. The compound activates heat receptors on the tongue. During exposure to heat, such as while cooking the ginger root, the compound transforms via a reverse aldol reaction into zingerone. The gingerols also can degrade to shogaols during exposure to mild heat while drying, through a dehydration reaction.

In both in vivo and in vitro pre-clinical studies, gingerols have shown anticancer, anti-inflammatory, anti-fungal, antioxidant, and neuroprotective properties.
